Owner Stephen Distler teamed up with five-time James Beard Semifinalist and food activist Scott Anderson in 2008. Their first restaurant, elements, elevated the Princeton New Jersey dining scene, providing exceptional modernist cuisine with incomparable service. Five years later they opened Mistral treating diners to a progressive menu of culturally inspired share plates. Each restaurant has been listed by New Jersey Monthly Magazine among the top twenty five restaurants in the state every year since inception.
Aether enters the exciting and rapidly evolving dining scene in the Fishtown section of Philadelphia. It offers guests an innovative menu of the freshest seafood paired with the most inviting raw bar in Philadelphia.
Although Aether is a different concept, Mr. Distler has drawn on people already experienced in the culinary culture established in Princeton. They retain the same superlative focus on fresh and local ingredients and an emphasis on warm attentive service.
The initial design and decor was largely the work of Fia Berisha, another Princeton team alumni, who has since moved on to her next project.
